4 skinless, boneless chicken breast halves, cut into bite size pieces
1 onion, chopped
1T minced garlic
1/2 pound baby carrots
1 1/2 zuchinni
1/2 teaspoon salt
1/4 teaspoon ground turmeric
3 tablespoons tomato paste
1/2 cup water
Salt and pepper to taste
In a dutch oven put onions, garlic, baby carrots, zuchinni, and cut up chicken. In a cup mix up tomato paste into water add tumeric. Dump into pot w/ chicken and stir. Add salt and pepper. Cook on a med-low heat for about an hour -stir occasionally.
I made rice for my husband to have with it.
