Healthy Chicken Salad

I have decided to modify a chicken salad recipe I found to fit with my eating plan. I haven't made this yet but will come back to report how it turned out.


1 lb boneless skinless chicken breast
1/2c dries cranberries
1c diced celery
1 diced onion
3/4c seedless grapes
1/2c walnuts
1- tart green apple diced
1tsp Lime juice
2-ripe avocados(dice up 1, use other 1 for dressing)
salt and pepper to taste

Boil Chicken breast- an pull apart. Mix together in a bowl chicken, cranberries, celery,onion, seedless grapes, walnuts, apple, and 1- avocado diced up. In a food precessor puree 1 avocado and lime juice. Mix with chicken mixture. Add salt and pepper to taste.
